The knives are treated in three steps. In the first steps the blade edge is formed and sharpened using 100% diamond covered sharpening disks. In the final step the blade is polished.
The micro-steels allow individual adjustment in the sharpening of each knife, so you can give a slicer, carver, peeler of paring knive their individual edges. We recommend the CC130 for specialists only. Unless you know exactly what you do, the standard edge formed by other Chef´s Choice models is a saver choice.

The Chef´s Choice model CC130 can handle straight edged (double and single edge) and serrated knives. The diamond sharpening disks can handle even the hardest steel alloys.
Step 1: diamonds create the perfectly formed cutting edge.
Step 2: This is the sharpening stage, where the diamond covered sharpening disks produce a sharp edge. Using the micro steels you can give the edge its individual finish.
Step 3: Flexible polishing disks, polish the knife. Use this stage also instead of a steel, when the knife is still sharp, but has lost its bite. The polishing disk removes nearly no material, but it is essential to produce a razor sharp edge.
Use only step 3 for serrated knives. The teeth of the serrated knife are realigned and sharpened. You will immediately notice the difference.
The sharpening disks are covered with industrial diamonds. The CC130 has been designed for specialts who want to give each knife an individual finish.
Chef´s Choice sharpeners are easy to use. Precision guide technology ensures the perfect sharpening angle. You only have to slowly pull the knife through the sharpener.
The electromotor requires no service. You will have to clean the sharpening unit from time to time. Metal particles may cover the diamond and polishing disks, which might reduce their effectiveness.
The CC130 is not suited for scissors, Japanese of Chinese style knives as they require a different sharpening angle.
Small (1 mm long) scratches may appear close to the edge. Therefore it is not recommended to use the Chef´s Choice knife sharpeners for decorative knives.
