Marmelot fruit powder is produced from real fruit, using two basic techniques: vacuum drying and spray drying. These processes preserve the original
taste, colour and nutritional value of fruit. All fruit powders are 100% natural. No chemical aromas or preservatives have been added.
There are two kinds of fruit powders depending on the substrate for the drying process. Fibery fruit powder is made from fruit pulp. Maltodextrin from corn is added during the vacuum drying process. This fruit powder contains all natural fruit fibers and has a coarse structure (granulate). Reconstituted in water, it produces thick fruit pulp or a
smoothie dependent on the amount of water used. Fibery fruit powder is ideal for desserts, pastries, sweet and savory sauces. Juice fruit powder is obtained from fruit juice concentrate. It has a finer structure and contains no fibers. Maltodextrin or sugar is added to prevent caking of the powders.
Juice fruit powder dissolves easily in water and produces clear solutions.
It is perfectly suited for drinks and jellies. Further it can be used in all your sweet and savory preparations in the same way as fibery fruit powders are used.
To reconstitute natural fruit juice, add about 10% powder in water: 100 g fruit powder in 1 liter water.
To make beverages, adjust the amount of fruit powder to your own taste. You will need 50-100 g per liter, dependent on the fruit sort. Some fruit powders (e.g. citrus fruit) have
a strong taste and acidity; you can use them sparingly and you may want to add sugar or sweetener.
If you add less water you will obtain a smoothie.
The best before date
The best before date indicated on the fruit powder is typically more than a year away at the time of shipping. Bacteria and fungi cannot survive in fruit powders, due to the lack of water. Therefore the fruit powders contain no conservatives and can be used for a very long time. If the powders are stored properly, they can still be consumed after the best before date, however the taste will become less intense and some vitamins will have disappeared.
Storing fruit powders
Fruit powders should be stored in a dry cool and dark place.
The natural fruit sugars in the fruit powder like to attract water. Maltodextrin is added to avoid clumping of the fruit powders; nevertheless some clumping may occur in a moist environment. In most cases the fruit powders can be easily restored by grating or in a food processor. Note that fruit powder clumps can be used in recipes and eaten like normal fruit powder. In fact you can make your own fruit candy by leaving the powder in open air for some time.
Fruit powder and health
Fruit powders are made from fresh fruit by a mild drying technique. Most nutricients and vitamins in fresh fruit are captured in fruit powder. Fruit powder is therefore a healthy choice when fresh fruits are not available.
Fruit powders are used in the same way as fresh fruits in natural medicine. For example cranberry powder is used to treat urinary tract infections and kidney stones; pomegranate powder is used to strengthen the heart and blood vessels, while guava powder is eaten for its high vitamin C content.
